Ingredients:

  • 1/2 cup cooked quinoa
  • 2 cups spinach
  • 4 oz roasted salmon
  • 1/4 cup broccoli tomatillo mix (recipe listed below)
  • 1/4 cup carrots
  • 2 Tbsp pumpkin seeds
  • 1/4 cup watermelon radish
  • 1/2 avocado
  • 2 Tbsp Green Goddess dressing (recipe listed below)
  • 1/4 cup pickled onion

Recipe:

Start by cooking your quinoa according to the package instructions. Once it’s light and fluffy, set it aside to cool completely, as this helps keep the greens crisp when everything comes together.

While the quinoa cools, prep your produce. Rinse and dry the spinach thoroughly, then chop the carrots and watermelon radish into bite-sized pieces for easy layering and a balanced bite in every forkful.

Next, cook the salmon to add some protein to the dish. Season lightly with salt and pepper, then roast or pan-sear until perfectly cooked through. Let it rest for a few minutes before flaking it into large, tender pieces.

To assemble, begin with a base of spinach and quinoa in a large bowl. Add the chopped vegetables and the broccoli-tomatillo mix, then layer in the avocado, pumpkin seeds for crunch, and pickled onions for texture and brightness.

Top the bowl with the warm, flaky salmon, then finish with a generous drizzle of green goddess dressing.

Give everything a gentle toss to combine, or leave it beautifully layered for presentation. Serve immediately and enjoy a fresh, flavor-packed bowl that celebrates greens in every bite.

AVOCADO GREEN GODDESS DRESSING RECIPE

Ingredients:

  • 1/2 cup Greek yogurt
  • 1/2 Tbsp avocado oil
  • 1/4 cup water
  • 2 Tbsp avocado
  • 1 tsp lemon juice
  • 1 garlic clove
  • 2 Tbsp parsley
  • 1 Tbsp scallions
  • 1 tsp salt

Place all ingredients into a mixing bowl and blend until fully smooth (45–60 seconds). Move the blender around until everything is blended properly. Can be stored in the fridge and used for three days.

BROCCOLI TOMATILLO MIX

Ingredients:

  • 1/2 cup sliced broccoli
  • 1/2 cup diced tomatillo
  • 1 tsp avocado oil
  • 1 pinch of salt
  • 1 pinch of Guajillo pepper powder

Rinse and dry the raw broccoli and tomatillo. Thinly slice the broccoli and dice the tomatillo. Mix in a bowl with the salt and Guajillo pepper powder. Add avocado oil and mix again. Can be stored in the fridge and used for three days.
