Seed Crackers & Broccolini Dip

Ingredients

For the Broccolini Dip

  • 1 small yellow onion
  • 6 ounces broccolini
  • 5 garlic cloves
  • ¼ cup extra-virgin olive oil
  • ¼ teaspoon red chili flakes
  • ½ teaspoon fennel seeds (optional)
  • ½ teaspoon lemon zest
  • ¾ cup greek yogurt, 150 grams

For the Seed Crackers

  • ¾ cup rolled oats
  • ½ cup almond flour
  • ¼ cup flax meal
  • ¼ cup sesame seeds
  • ¼ cup sunflower seeds
  • ¼ cup pumpkin seeds
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ½ teaspoon red pepper flakes
  • Diamond Crystal kosher salt
  • Extra-virgin olive oil
  • ½ cup warm water
  • ½ tablespoon honey

Simplified Directions

For the Broccolini Dip

  • Thinly slice the onion and finely chop the broccolini. Grate the garlic and set aside.
  • In a pan over medium heat, add the olive oil. Add the onions and cook for 20-30 minutes or until beginning to caramelize. Add the chili flakes, fennel seed, chopped broccolini and garlic and cook for an additional 5-10 minutes, or until the broccolini has softened. Season liberally with salt.
  • Either with a knife or in a food processor, chop up the broccolini mixture until it is fine. Add the lemon zest, taste and season with salt and pepper as preferred.
  • Mix this in with the yogurt to get a creamy consistency. Serve now or store for later!

For the Seed Crackers

  • In a large bowl, whisk together the oats, almond flour, flax, sesame seeds, sunflower seeds, pumpkin seeds, rosemary, thyme, pepper flakes and ½ teaspoon salt. Drizzle 1 tablespoon of olive oil over the mixture and stir to combine.
  • Pour warm water into a bowl and whisk in the honey until it dissolves. Pour this into the oats mixture and stir to combine.
  • Spread this out on a lined sheet pan and bake at 350 until deeply golden throughout, 30-35 minutes. Let cool before breaking into pieces.
