Coconut Butter Dates with Pistachios

Ingredients

  • 6 large medjool dates
  • ¼ cup coconut butter
  • 2 tablespoons dark chocolate chips or wafers
  • 2 tablespoons raw pistachios
  • Flaky Salt

Simplified Directions

  • Pit the dates and tear them apart slightly, so that they are still fully intact, but have an opening on one side.
  • Scoop the coconut butter evenly into each date, press in a few dark chocolate chips.
  • Either in the microwave or a toaster oven, gently warm the dates so that the chocolate is just beginning to melt.
  • Finely chop the pistachios and sprinkle them on top of the melted chocolate and coconut butter so they stick. Sprinkle with flaky salt and eat warm.
